Grape harvest method and season
First ten days of September – Manual harvest.

Vinification
Grapes are harvested, put into small boxes, and then passed through the press when still intact.
An alcoholic fermentation at almost 15° follows and lasts 4 weeks

Sparkling process
Classic method. The base wine is fermented again in the bottle.
Two years of aging on the yeasts follow.

Organoleptic Characteristics
Alcohol 13-13,5% – Acidity 8g/l
Shining light gold color. Abundant foam with fine and persistent perlage.
Strong aroma with notes of white-fłeshed fruits and citruses, and a final fragrant tone of bread crust. The sip is full, neat and dry, with a pleasant and strong freshness.
